To succeed on a healthy raw food diet, you have to eat your fruit when it is ripe. In this video, I’ll show you how to pick the perfect papaya that’s ripe, sweet, and juicy.

It won’t be pretty…
- For your average large papaya that can be found in American supermarkets, the fruit should give to the touch and have some moldy spots as well.
- If you buy it fully green and hard, you’ll have to wait 5-7 days for it to ripen.

It’s true, we low fat raw foodists love this fruit. Bananas are cheap, readily available, relatively high in calories, and delicious.
But do you have to eat bananas on a raw vegan diet to be successful?

Sodium and Raw Foods: How Much Do We Really Need?

The following excerpt is from the latest issue of my Rawkin’ Raw Newsletter

Itʼs no secret that Westerners take in way too much salt, with the average American consuming over 3.5 grams of sodium each day.
At 1.5 grams, thatʼs over double the Adequate Intake (AI) set by the Institute of Medicine!
Itʼs also no secret why weʼre consuming so much sodium: salt.
Salt is everywhere. Itʼs in our frozen pizzas and TV dinners. Itʼs in our canned beans and vegetables. Itʼs even in our sugary cereals and pastries! Itʼs on our kitchen tables to be liberally sprinkled onto our already-salty entrees.
Of course, on a healthy low fat raw vegan diet limited in salt (or completely devoid of it), itʼs extremely easy to keep sodium intake well under 1.5 grams.
In fact, as I show below, it is possible to consume less than 100 mg of sodium, even on a diet of 2000 calories!
But is this really a problem? Do we really need 1.5 grams of sodium every day to be healthy?

Is Vitamin K2 Really an Issue for Raw Foodists?

Is it true that vitamin K2, a vitamin K derivative produced by bacteria and found in animal products, is a separate nutrient necessary for proper blood clotting and healthy arteries? Should you worry about getting enough of it on a raw vegan diet?

We Don’t Need Meat for K2
- K2 is a derivative of vitamin K produced by bacteria and found in animal products; it is not a separate nutrient.
- We can convert k1 to k2
- Bacteria in the lower intestines produce K2
Blood Clotting?
- One study from 1992 showed no difference in blood-clotting rates between vegans and non-vegans
Calcification of Arteries?
- Yes, high levels of both k1 and k2 have been shown to reverse calcification; but wouldn’t it be better to avoid arterial damage in the first place? (i.e. eat healthy, exercise, avoid blood thinning drugs, etc.)

How to Get Vitamins A, D, E, & K on a Raw Vegan Diet

Think you can’t get enough fat-soluble vitamins A, D, E, and K on a raw food diet?
You’re wrong.

Video Summary
Vitamin A
- You’ll get TONS of beta-carotene from fruits and vegetables, which your body can then convert to retinal (vitamin A)
Vitamin D
- Called the sunshine vitamin for a reason
- Those who are deficient don’t spend enough time outdoors, live too far away from the equator, or both.
Vitamin E
- Eat enough calories and get in your greens and you’ll get plenty
- Magnesium is necessary for proper absorption, a mineral that you’ll get plenty of from fruits and vegetables.
Vitamin K
- You’ll get TONS of vitamin K1 from fruits and vegetables (e.g. 8 ounces of romaine has over 4x the RDA).
What About K2?
Today, everyone is up in arms over vitamin K2, a form of vitamin K that has links to proper blood clotting and arterial health. The problem is that K2 is only found in animal products (or is it?).
But is vitamin K2 really necessary? Must we consume animal products or supplements in order to get enough and ensure optimal health on a raw food diet?
