Healthy Raw Bread Recipe: Mission Impossible?

I’ve received a lot of emails concerning my critique of that ridiculously unhealthy raw vegan bread recipe.

Most people want to know how to make a raw bread that is not only tasty, but healthy as well.

My reply? I don’t think you want it.

If you’re looking for a way to make tasty bread using raw ingredients that’s actually healthy for you, you’re not going to like my answer.

So if you don’t want to be disappointed, go ahead and click the little “x” at the top of your browser. No worries, I won’t be offended.

Oh, you’re still here? Okay, you asked for it…

You can’t make healthy raw bread. Nope, it can’t be done.

Here’s why:

#1: Bread is Dense

The only way to get that dense bread-y texture from raw ingredients is to use ground nuts, and lots of ‘em.

Lots of nuts mean lots of fat. Definitely unhealthy.

#2: Bread is Dry

This goes without saying, but you can’t use fresh, water-rich ingredients to make a recipe that even moderately resembles bread.

You’ll just end up with a wet, gloppy mess.

Sure, you could try incorporating a bit more fresh ingredients, like carrot pulp leftover from juicing, but this is going to result in a wetter consistency and a sweeter taste (unless you dehydrate, of course).

In other words, the result will be less bread-like.

To get the texture and consistency of bread, you have to use mostly dried ingredients—like dried nuts—or use wet ingredients and then dehydrate the entire mixture.

Dried foods are not optimal. They’re fine in small amounts, such as a handful of raisins or an ounce of nuts, but they just can’t compete nutritionally with foods in their fresh, whole, raw state.

Don’t Be Sad, Carb Cravers

There’s no reason to be upset. If you’re doing the raw diet the right way, you won’t crave bread or other complex carbs at all. I can tell you that I honestly can’t remember the last time I had any bread yet I don’t miss it at all.

And I was a HUGE bread eater before I went raw in 2007. I loved bread (especially cheesy artisan breads), pastries, and cakes. I loved baking and cake decorating and even planned on opening my own speciality cake shop!

But I don’t miss any of it. In fact, there aren’t any cooked foods that I miss! That’s because I eat a delicious low fat raw vegan diet that satisfies all of my caloric and nutritional needs.

But Maybe I’m Wrong…

Maybe there is a way to make a healthy and tasty raw, vegan, and gluten-free bread. If you’ve got a recipe like that, I’d love to hear about it in the comments below!

P.S. And no all you hardcore raw foodies, lettuce does not count as bread.

Sure, you can use it as a way to wrap ingredients together. But does a lettuce leaf come anywhere close to the taste, temperature, or mouthfeel of homemade bread? I don’t think so.

That said, I use lettuce wraps all the time in recipes and it’s supremely healthy and delicious. But it ain’t bread. :)

What about Essene bread? I always thought it was very healthy, and technically raw? Am I mistaken?

Essene bread is made from sprouted grains that have been dehydrated. While it is healthier than most breads and certainly better than that fatty raw version, it’s still a dehydrated food. Plus, grains (cooked or sprouted) are not optimal foods for humans:

Bread.. when I went high raw I had so many cravings for bread… if I look at these pictures I still miss it: http://blogs.babble.com/family-kitchen/2011/08/26/25-back-to-school-sandwiches-veggie-style/ However after a few months of no bread and of course lots of fruits and vegetables I’m no longer craving any bread! Hooray for me! I haven’t eaten bread for several months now and I am pretty happy with it.
