What About Dehydrating?
Ania (beautiful name!) asks,
I wanted to know what you thought about dehydrators. Most recipe raw food recipe books have recipes that call for dehydrating. What are your thoughts on dehydrating? Could it be a way to enjoy fruit and veggies purchased in the summer but eaten in the fall or winter? Or to enjoy vegetables like eggplant that I find very unpalatable raw?
Despite what the raw food gurus want you to think, dehydrated foods are refined foods. Much of the water has been removed, carrying other vital nutrients along with it. Even a simple dried banana is no longer truly raw because it has been processed. It is no longer a whole food.
That said, eating dehydrated produce on occasion is perfectly acceptable. For instance, adding a few dried dates to a raw recipe for sweetness.
This practice only becomes a problem when you start making dehydrated foods a large part of your diet, which is (unfortunately) something many raw recipe books encourage. If it is common place for you to consume an entire bag of raisins or even just eat dried fruits everyday, you should definitely think about reducing the amount of these foods and increasing the amount of WHOLE ingredients you consume.
With regards to the eggplant, if you find a food unpleasant in its raw state, it’s highly likely that it is not an optimal food to begin with. However, if you like eating dehydrated eggplant, that’s okay. Just be sure to follow the advice above and consume it sparingly. The bulk of your intake should always come from sweet fruit, with additional non-sweet fruits and greens.

Actually, I really didn’t like bananas much either when I first went raw. I could only eat them in a smoothie with other fruits so that I couldn’t taste them much. Once I started eating more of them, I gradually started to like them. Now I love bananas!

I have often wondered if removing the water from raw food would also remove the nutients, do you know where I can further research this?
It’s true that people do choose their lifestyles, but if they decide to eat lots of unhealthy and fast foods, they will end up with all kinds of illnesses and disease. They’ll have less energy and vitality. A mainly raw food diet will make you feel and look much better.

Very true, Suzanne. But some people honestly don’t care about that and that’s their right.
I think the raw eating plan is by far the easiest – I no longer cook! I buy fruits and salad things, and I’m set. I’m trying to be aware of benefits though and while I’ve always had weak fingernails, I noticed, they are splitting and breaking down below the finger – can’t pick up anything and is sometimes painful. Am I still OK raw or does this indicate needing more protein? Jan

You live this way because it makes you happy and encourage others to do whatever makes them happy. I couldn’t agree more. To each their own. Thank you again for doing all of this.
