Plantain Pudding Raw Recipe Video
In today’s video blog, I showcase a delicious recipe called Plantain Pudding (contributed by Ellen Livingston at www.LivingYogaNow.com) from my healthy raw recipe book:

I also give some vital tips for preparing and eating the oft-forgot plantain. For instance, did you know that plantains contain more calories per ounce than bananas?

Plantain Pudding
Ingredients:
- 2 ripe plantains (black on the outside, soft on the inside)
- 2 bananas
- (Garnish): Celery, finely diced
Directions:
Blend everything until smooth and creamy. Garnish with finely diced celery.
Swayze’s Tips:
When it comes to tasty plantains, you want them really black on the outside and super duper soft on the inside…the uglier the better! Trust me, you do not want to dig into a sweet pudding full of unripe, chalky plantain.

Great vid and info, Swayze! I wanted to see you cut open and scoop out the plantain though…since I’m never done it. I almost bought some yesterday! How else do you eat plantian? Alone like a banana, or in a smoothie?

Thanks for the vid on plaintains, never tried one raw. Now that I know something about this fruit I will! I noticed that you have a G’town p.o. box address, do you host live meetings in the Memphis metro area? I live in Mphs metro area. And are you on Face Book?

Hi Swayze,
Great video! I need to make this for Little Andrew sometime.
I noticed that since we’ve been in Panamá that you don’t necessarily have to wait for the plantain to get black and squishy before it’s ripe.
Here they’re ripe enough to eat once they have many black streaks on them and they can still be rather firm.
The best way to tell is if the skin peels easily. If this is the case they are ripe enough to eat!
Little Andrew LOVES eating “platananos” (his name for plantains) this way.
They are quite tasty–sweet and not starchy at all.
I think for the recipe it’s probably better to wait for the skin to turn totally black as you recommended.

Hi Swayze,
I just made a half recipe of “platanano pudding” for Andrew.
He LOVES IT!
He keeps saying, “Mmmm! Rico!” over and over again!
I think this is going to become one of his staples!
