I've been making this salad lately. Since I don't have my spiralizer with me I just peel the cucumbers with a vegetable peeler into strips.

I use 1 oz of walnuts as the overt. DELICIOUS.

Of course I add extra tomatoes into the salad ;) and I also use fresh basil and a little bit of scallion and cayenne pepper.

Mmmmmmmmm .... RICO!

I may be the only one ever, but I did not have the super quick weight loss that most people experience going raw. I lost a lot of water weight during the first couple of weeks, but fat loss has been incredibly slow for me. It's something I've struggled with for years and an issue I think my binging played a part in...I just don't lose weight easily. I sure can pack it on, though. ;)

If you are looking to put on weight, the best advice I can give is to adopt a weight training program. Start small (think 3-5lbs or even a light tension resistance band) and work yourself up from there. I've been into heavy weight training for many years now and it has definitely improved the shape of my frame. :)

You can get lots of possibilities for dressing by combining something from each of the following groups:

(a) lemon or lime
(b) fresh herb
(c) non-sweet fruit
(d) celery leaves
