A Special Raw Recipe for the 4th of July
Independence Day is right around the corner and I know what you’re thinking…
Hot dogs, french fries, turkey legs, ice cream, etc.
It’s the day when you pig out on all the fattening, artery-clogging foods of summer.
It’s tradition, right?
I say let’s start a new 4th of July tradition. A *healthy* and *delicious* tradition!
To get the ball rolling, here is a simple raw recipe I whipped up special for the July 4th.
Red, White, and Blueberry Pudding
- 4 medium bananas
- ½ cup of raspberries
- ½ cup of coconut water
- ½ cup of blueberries
- un-toasted coconut shavings
1. Blend 1 banana with the raspberries. Layer into a parfait glass
2. Blend 2 bananas with the coconut water. This is the second layer.
3. Blend 1 banana with the blueberries. This is the last layer.
4. Top with raw coconut shavings or finely diced fresh coconut meat.
This is a wonderful, rich pudding parfait that just screams summertime!
Variations
If you have access to durian, you could make the banana-coconut layer a durian-coconut or durian-banana layer! Yum.
Cherries would be a nice replacement for the raspberries, as well.
You could also freeze all of the ingredients and make a refreshing fruit ice cream! Instead of blending the 3 different layers, you would put them separately (frozen, of course) into a food processor. Let the food processor run until the mixture reaches an ice cream-like consistency.
This should only take a few minutes, but make sure to stop the machine and scrape down the sides every minute or so.
